Cheesy Garlic Chicken Casserole


This is my new favorite! My shelves didn't give me much of an option, I ended up having to make this up and hope it was yummy enough for my picky little ones.What ya need :



  • 2 cans Snows Chicken 10oz 
  • 1 can Cream of Chicken Soup 10 3/4 oz
  • Johnny's Garlic Cheese Spread
  • Lays Garlic Cheesy Bread Chips
  • LG macaroni pasta, half bag. 
  • 12X8X2 pan lined with foil


Preheat your oven  at 375.  Cook noodles as directed on package. While waiting for noodles to cook, line your pan with foil; open and drain your canned chicken. I was pressed for time so instead of grabbing a bowl for mixing, I mixed everything in the pan with a silicone spatula to avoid tearing the foil.


Add canned chicken, sprinkle with salt, pepper, and Johnny's Cheesy Spread. 
Once noodles are done, drain and add to pan, add soup and one can full warm pasta water, mix well.Once all is mixed, spread evenly in pan.




Grab a handful of chips crush and sprinkle, do this a few times until spread evenly across pan; I grated a small amount of cheese on top and added another layer of chips.  

Bake @375 for 25 minutes, Let cool for 10 min.

You can always add a bag of frozen peas or mixed vegetables. You can always substitute the can of water with milk for a creamier sauce.

Simple Mini Apple Pies


      Let me start off by saying - UM YUM! I love apple desserts, no matter what form and have been looking for a recipe that didn't have a million steps, cost too much, or have a long lists of ingredients. Unfortunately I didn't find anything all that simple, so decided to kinda do my own thing and hoped it turned out. It did ! Hooray! No food wasted . My husband doesn't like sweets,but my little people do. So this recipe is not super sweet, but not tart, it's really the perfect balance between the two. I used golden delicious   apples because they tend to be softer and mildly sweet, this recipe has a short baking time so crisp apples might not work.


Ingredients:
  • 3 Large Golden Delicious Apples
  • Pillsbury Grands Flaky Layers Biscuits
  • Pumpkin Pie Spice
  • Ground Nutmeg
  • Cooking Spray 
  • Granulated White Sugar
  • Salt

Preheat your oven to specified time on biscuit can. Wash and peel your apples, dice them up into very small chunks about 1/4 in; place in medium sized bowl. Once apples are all chopped up sprinkle over pumpkin pie spice, follow with nutmeg, add a very small dash of salt, then add 3/4 to 1 cup sugar, or more depending on your preferred sweetness. Mix well. 

 This recipe yields 16 Mini Pies; so you'll need a 12 cup muffin tin and a 4 cup tin or whatever you have. Spray the muffin tins generously. Open your biscuits, place them on a plate. I do this next part 2 @ a time, I place the plate in the fridge until I need 2 more. The warmer the dough gets the stickier it gets. Take a biscuit and on the side of it find the middle, place your thumbs and slowly separate, trying to get a even amount on both sides. Take one half and flatten it between your hands, or you can roll it out. Gently pull on the dough in a circular motion like pizza dough, no too large just enough to fit inside the muffin tins. Place the dough in the greased tin, push the center in and pull the sides up.          Once all the dough is in place, start scooping in your apple mixture, all the way to the top. My dough sides started to sink, so before I added the mixture I pulled them back up and dropped in the apples, they helped keep the dough up. I cut up small pieces butter and placed on top of the apple mixture before I set in the oven
 Let mini pies bake for about 12-15 minutes, if you prefer a crunchier crust let bake 18 min. Once the times is up they don't take too long to cool down. Ours cooled down within in 4-5 minutes. My little people were snatching them out of the tin almost instantly after I took them out of the oven. They are a yummy dessert with a scoop of vanilla ice cream on top or an easy breakfast with a dollop of vanilla yogurt, or just naked! Have fun & Enjoy (: 



Left over spaghetti pizza ......

   
     I love when I make any kind of pasta dish that I always have an abundance of left over meat sauce and garlic bread. Thus I get creative to avoid the waste ! My easiest and fastest recipe for left over pasta fix'ins, is pizza. 


Pre-heat your oven to 350 degrees. Grab your extra pieces of garlic bread, ladle cool meat sauce (any pasta/pizza sauce) on top. Slice up some cheddar, place on top. Set pieces on cookie sheet, place on top rack in oven; let bake for 5-8 min. 

One of my favorite left over recipes, and my little people love them for lunch ! Enjoy <3

Breakfast Crescents

   I am starting a food blog !  I am a mother of three, preschooler, toddler and newborn. Needless to say I am always running out of time. From meal time to appointments to household responsibilities, I never have enough time. I love every kind of food, but most of all I love EASY food, cheap too. I usually go to bed around  3 am, wake up around 8 am. I'm pretty much a zombie before I crack open a SF Redbull. The creativity part of my brain isn't awake until about, oh I don't know noon-ish?  So I try and figure out what I'm going to make before I head to bed.  Today was my first try going outside of my "cold cereal and pancakes"  breakfast box. 

I made Breakfast Crescents ! So easy to make and with all the smiles and stuffed faces, I'm assuming my family loved them . 


   You'll need : 
  • 1 package of  refrigerated crescent roll dough (any brand)
  • 4 eggs
  • 1 package bacon
  •  1/2 lb Cheese (Cheddar,Colby-Jack, whatever) 
Preheat your oven as specified on crescent package. Grab a bowl and scramble your eggs, fry them up in a skillet. If you're a morning person I'm sure you'll wake up in time to cook your package of bacon, and crumble it into pieces; while the eggs are cooking you'll sprinkle them in and then scramble. If you're anything like me, you'll wake up 20 minutes late and just sprinkle the Oscar Meyer bacon bits you bought for your salads right on top and scramble.Once the eggs are cooked set them aside. Grab your crescent dough POP it open, and take apart each triangle.Gently stretch it out at the top, not too much you don't want it to rip. Spoon a helping of your cooled eggs onto the dough. Cut a small 2in bar of cheese place it on top and roll the dough over as specified on crescent dough can. Bake for the same time as it says on can.

& Viola!   They should be pretty freaking awesome! My little people eat them with ketchup but by themselves are still stinking good. Any leftovers are usually used for snacks. Hopefully you enjoy. FYI, these are not super healthy, they have a good amount of fat; my husband and little people burn a million calories just breathing so they do just fine.
